I work in such an environment for 12 years now (medical devices) but can’t say that there is a standard way of dealing with things. Even in the same company we have different quality management systems in different departments while adhering to the same standards and regulations.
What all have in common is that they are audited on a regular basis to get the certificates to be allowed to sell stuff to the market and that the auditor checks if you fulfill the requirements of the standards and laws and that you fulfill your own setup process.
That means that the day to day work is build on top of that process. If the process says that you need to make screenshot of every dialog that is shown, you do that.
The standard differ a lot between the mentioned industries, though. Automotive is stricter in some areas than building medical devices and more lenient in others. Focusing on one of the mentioned industries might help for your round table.
